Tuscan tuna salad
No need for mayo with this super food: Canned tuna
- 1 15 oz. can of no salt added cannellini beans
- 2 5 oz. cans of albacore tuna, undrained
- 1 tsp. lemon zest
- 3 Tbsp. lemon juice
- 1 cup of grape or cherry tomatoes, halved
- ½ cup red onion, thinly sliced
- 4 cups of arugula
- In a small bowl, combine lemon zest and lemon juice. Mix and set aside.
- In a large bowl, add albacore tuna, lemon juice mixture, grape tomatoes, red onion and arugula.
- Toss gently. Then add the cannellini beans.
- Mix to incorporate.
