This Asian-inspired wrap is savory, sweet and makes a satisfying lunch option. To make it vegetarian, swap the chicken for chickpeas or tofu.

Serves 4.

Ingredients

  • 1 cup cooked, diced chicken
  • 1 cup chopped celery
  • 2 cups canned, drained mandarin oranges
  • 1 cup chopped onion
  • 2 tablespoons mayonnaise
  • 1 teaspoon soy sauce
  • 1 teaspoon garlic powder (or 2 cloves garlic)
  • 1 teaspoon pepper 
  • 1 large whole wheat tortilla 
  • 4 medium lettuce leaves

Directions

  1. In medium bowl, mix chicken, celery, oranges and onions.
  2. Add mayonnaise, soy sauce, garlic and pepper. Mix gently until chicken mixture is coated. 
  3. Cut tortilla into quarters.
  4. Place lettuce leaf on each tortilla quarter.
  5. Place chicken mixture in the middle of each leaf and roll up the tortillas.

Nutrition per serving: 180 calories, 7 g fat, 30 mg cholesterol, 230 mg sodium, 14 g carbohydrates, 4 g sugars, 14 g protein.
