Stuff yourself (on peppers)

Vegetarian stuffed peppers recipe
Serves 4.
Ingredients:
- ½ cup uncooked brown rice
- 2 small onions, diced (fresh or frozen)
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 4 bell peppers, any color
- 1 cup tomatoes, diced (if using canned, look for low-sodium or no salt added)
- 1 tablespoon fresh basil, chopped (can use 1 teaspoon dried)
- 1 tablespoon fresh oregano, chopped (can use 1 teaspoon dried)
Directions:
- Heat oven to 350º F.
- Cook rice according to package or until tender.
- Slice the peppers lengthwise and scoop out the seeds.
- In a medium saucepan over medium heat, add the olive oil, onions and garlic. Sauté until the onions are translucent.
- Add the tomatoes, basil and oregano and simmer for 5 to 10 minutes.
- Stir in cooked rice and mix until all ingredients are incorporated.
- Spoon the rice mixture into the pepper halves and place in a baking dish.
- Cover and bake for 30 to 40 minutes.
